Gelat nitro

Objectiu: Preparar un gelat amb nitrogen líquid i menjar-lo!

    Guants d'escala

    Recipient per a nitrogen líquid (Dewar)

    Culleres i gots de plàstic

    Biberons

  • Ingredients per a 4-5 persones

    Crema (90 g)

    Llet (100 g)

    Sucre (20 g)

    extracte de vainilla (2 culleradetes)

    Colorant alimentari

    Nitrogen líquid

  • Seguretat

    Utilitzeu els guants especials per manipular el nitrogen líquid i aneu amb compte ja que està a -196 °C.

    Utilitzeu materials designats per a experiments comestibles.

Procediment

  • En un bol, barregeu la nata, la llet, el sucre i l’extracte de vainilla.
  • Dividiu la barreja en 3 biberons i afegiu-hi un colorant alimentari diferent a cadascun.
  • Col·loqueu nitrogen líquid en un bol d’alumini i afegiu gradualment la barreja de les ampolles. Remenar constantment és clau per aconseguir una bona textura.
  • Un cop llest, serviu el gelat en tasses i gaudiu del vostre gelat acabat de fer!
